The difference is that offense have gotten better, sports science has gotten better, the rules have changed and teams scored less and forced more shut outs. A fairer comparison is who had the best performances compared to averages at the time and Georgia has the best when you compare it to what defenses do on average. In 1961 the wing T was still common, the QB want necessarily the top passer on the team and the I formation was still surprisingly new and Alabama didn't even recruit black players so the effectively limited their recruiting pool by 20%+I've heard it been said they do.
